Featured Recipe: Coffee and Cocoa Rubbed Wagyu Sirloin Steak

Ingredients:

2 Studex Wagyu Beef Sirloin Steaks
2 tablespoons freshly ground coffee
2 tablespoons unsweetened cocoa powder
1 tablespoon brown sugar
1 teaspoon smoked paprika
1/2 teaspoon ground black pepper
1/2 teaspoon sea salt
Olive oil for cooking

 

Instructions:

  1. Prepare the Rub: In a small bowl, combine the ground coffee, cocoa powder, brown sugar, smoked paprika, black pepper, and sea salt. Mix well to create a homogenous rub.
  2. Season the Steaks: Pat the sirloin steaks dry with paper towels. Generously apply the rub on all sides of the steaks, pressing gently to adhere.
  3. Rest: Allow the seasoned steaks to rest at room temperature for about 20 minutes. This allows the flavors to meld beautifully.
  4. Cook the Steaks: Heat a skillet over medium-high heat and add a splash of olive oil. Once hot, add the steaks and cook for about 3-4 minutes on each side for medium-rare, or until your desired doneness.
  5. Rest Again: Let the steaks rest for 5 minutes after cooking. This is crucial as it helps the juices redistribute throughout the meat, ensuring a juicy and tender bite.
  6. Serve: Slice the steaks against the grain and serve immediately. These steaks pair wonderfully with a side of garlic mashed potatoes and steamed green beans.
