Spicy Wagyu Boerewors Stuffed Peppers

Spicy Wagyu Boerewors Stuffed Peppers Recipe:
1kg Wagyu Boerewors
4 large bell peppers (assorted colors)
1 cup cooked quinoa
1 medium onion, finely chopped
2 cloves garlic, minced
1 cup cherry tomatoes, halved
1/4 cup fresh parsley, chopped
1 teaspoon smoked paprika
Salt and pepper to taste
Olive oil
1 cup grated mozzarella cheese

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, cook the Wagyu Boerewors until browned and crumbled. Remove from heat and set aside.
  3. Cut the tops off the bell peppers and remove the seeds and membranes.
  4. In a bowl, mix the cooked boerewors, quinoa, onion, garlic, cherry tomatoes, parsley, smoked paprika, salt, and pepper.
  5. Stuff each bell pepper with the boerewors mixture and place them in a baking dish.
  6. Drizzle with olive oil and cover with aluminum foil.
  7. Bake for about 30 minutes. 
  8. Remove the foil, top each pepper with mozzarella, and bake for another 10 minutes or until the cheese is melted and golden.

Serve hot and enjoy!
