Instructions
Prepare the Wagyu Steak:
Remove the Wagyu steak from the refrigerator and let it come to room temperature (about 30-60 minutes before cooking).
Season both sides of the steak generously with sea salt and freshly ground black pepper.
Cook the Wagyu Steak:
Heat a cast-iron skillet or heavy-duty frying pan over high heat
Add the oil to the pan and swirl to coat.
Carefully place the steak in the hot pan. You should hear a loud sizzle.
Sear the steak for 2-3 minutes on each side.
Reduce the heat to medium-high.
Add the butter, crushed garlic, and thyme or rosemary sprigs to the pan.
Tilt the pan slightly and spoon the melted butter over the steak continuously for 1-2 minutes.
For rare: cook until the internal temperature reaches 49°C (120°F)
For medium-rare: cook until the internal temperature reaches 54°C (130°F)
For medium: cook until the internal temperature reaches 60°C (140°F)
Use a meat thermometer to check the temperature.
Transfer the steak to a cutting board and rest for 5-10 minutes.
Prepare the Sandwich:
Toast the bread slices until golden brown.
In a small bowl, mix the mayonnaise and Dijon mustard.
Spread the mayo-mustard mixture on one side of each bread slice.
Layer two bread slices with arugula or baby spinach, tomato slices, and red onion slices.
Assemble the Sandwich:
Slice the rested Wagyu steak against the grain into thin slices.
Place the steak slices on top of the vegetables.
Add a slice of cheese on top of the steak.
Top with the remaining slices of bread, mayo-mustard side down.
Optional Step (Melting the Cheese):
If you prefer melted cheese, place the assembled sandwich back in the skillet and cover it for 1-2 minutes over low heat, until the cheese melts.
Serve:
Cut the sandwiches in half and serve immediately.
